What is the simplest way to install a custom rom. Can i just go directly into nandroid backup and then install custom rom from there and i'm done?

I'am not sure, but the answer is NO. Everyone ROM has got his own requirements.
You should read the manual to ROM which you want to get.

Yes, it's also wise to put the file on your pc in case you boot loop or something happens to your sd
I recommend researching whichever ROM you are thinking about installing thoroughly before flashing your first rom. Each different rom has specific instructions for flashing them. There is an excellent n00b guide for flashing a new rom to a T-mobile usa defy. Though that guide is specific to usa defies, it has an excellent step by step guide for flashing an eclair rom. It would be worth searching for and reading. It details the backup process very well.
If you plan on upgrading to 2.2, you should search for and read the guide about how to upgrade to 2.2 without losing downgradability (by higgsy, I think).

I have a unbranded ROM but it's loaded with my operators Data settings, and I'll be loathed to type them in if I decide to return to the stock ROM, so is there a way to save your current ROM incase it goes wrong, or your flash and decide to go back?

Search for r6-desire-root.zip, follow first link in google.
If it fails try it on another os (or pc), it will always succeed
ROM Manager backup. Copy it to your PC for safe keeping.

..with rom manager it really works great; also the restore procedure works - I tried it.

Simple answer is no, it can't be done. You need root to backup your rom.
Actually, you don't need root to do a nandroid backup. Just a custom recovery.

If you have rooted and installed any decent backup software they can backup the entire rom and all settings.
Then even if you mess up your phone and boot loop it, as long as you can get into recovery you can restore everything.
So it serves multiple purposes, I prefer this method to rom manager and titanium backup.
Hey every. Sorry if this question is already answered and it is a repost. How can i uninstall Cyanogenmod 7 RC2 from my Incredible, but still keep it rooted? Would the same way work for other ROMs as well, or does each ROM have a different way to remove them? Thank you in advance for your help.
If you made a backup then you can easily restore.
If you didn't, then you can flash the stock incredible ROM.
You will continue to stay rooted unless you take additional steps to unroot your phone.
Also I think you may have a misconception of how the ROM's work. These aren't installed on top of your phone, they remove the old one and replace it with whatever ROM you flash. Of course as long as you made a backup before you flashed then how your phone was before the flash will be right there if you ever choose to restore.
I did backup before I installed the Cyanogenmod 7. How do i 'recover'? Also, if i were to flash, would this take me back to being unrooted?
The way I understood it you can use ROM manager to load the Nandroid you created before flashing CM7, bringing back all your settings/text/calls etc you had before flashing your new rom. I've yet to attempt to go back to stock so someone correct me if I'm wrong.
You'll keep root unless to take the steps to go from s-off to s-on, and flash the stock RUU. Restoring a nandroid will restore the backup to the exact point the backup was made, so make regular backups!

Ok. So i havent done anything because I am extremely busy, but now i have some time to get this done. As it is, I'm going to have to unroot my phone, putting it back to stock. How do i do this so that the s-off goes to s-on, and make sure everything is done properly? Thx for all your help
pretty sure you just flash the stock ruu and then run the unrevoked s-on tool.
i would run a factory reset before running the ruu and then again after just to make sure you are totally bone stock.
Should I use Rom manager to flash or use something else? Sorry for all the questions, just want to do this without problems.

If you made a backup power off the phone and reboot it into recovery. Go to the "Back Up and Restore" Tab and then restore. Choose the date and you are back.

Just a question: which version of Android is your Defy running? I know most Defys run Eclair, but some are already being sold with Froyo installed. This affects directly on the flashing process: if you have Eclair, you have to make a special kind of backup. You know, custom firmwares void your warranty.
If your Defy has Froyo and you flash another Froyo ROM (or CM7, which is Gingerbread), you can easily switch back to your stock firmware if you need to send your device to repair. If your stock ROM is Eclair, and you flash Froyo or Gingerbread, without the special backup, you won't be able to downgrade.
IMO this is a good place to start. Waiting for your reply in order to send further instructions.

I also got really lost in the first days, but you just have to have the discipline and patience to read a lot, after a few days of reading the defy boards here at xda I felt ready to start modding it.

I have a new defy with OTA froyo update from T-Mobile USA. If I want another froyo rom, do I need to flash the sbf/firmware, or can I just do a nandroid recovery of the new rom with clockworkmod?

If you flash a new sbf without a wipe, you will keep all your apps etc, whereas you'll have to back everything up and reinstall if u do a nandroid. i recommend backing up either way.

I don't really have anything on this phone to keep since its new, data and apps can be wiped out completely.
I do want to get rid of the motoblur apps.
So this is what I plan on:
Root (already done)
Install CWM
Backup my existing rom on sdcard
Copy new rom to sdcard
Flash new rom with CWM
Say goodbye to Motoblur
I imagine I will need to do a couple of data wipes in the process. I assume before backup and before flashing.
Will this work? Motoblur gone for good?

I highly recommend JBoogie3 roms. Quick and easy.
I'm using my HTC Desire with the official android 2.29. But now I want to flash with the latest cyanogen.
The tutorial given on xda-developers.com is for updating from 7.0.2 to 7.0.3. The wiki.cyanogenmod.com gives a slightly more detailed tutorial which seems to aim for a full install on the device taken from stock, but the link to download the rom targets the same file as for the xda-developer tutorial i.e. update-cm-7.0.3-Desire-signed.zip.
So I would like to know how to proceed.

I agree the tutorial gives instructions to upgrade from other roms than cyanogenmod but there's this input in the tutorial:

That doesn't change anything. If you want to flash without any problems, NAND backup, full wipe, then flash the rom you want.
Is wipping out the current rom,backing it up ,flashing the rom a must to do before flashing in a new rom or a desired one ?
General rule of thumb. If changing rom it's an absolute must! There's no rom's that I am aware of that allow switching to another rom without losing all of your data (if you haven't backed it up).
If updating rom, try it and see. Most of the time you can just install the updated rom with no wipes and it works. If it doesn't then you always have your Nandroid and Titanium backups to rely on don't you? Please tell me that you didn't update / change rom without backups.....

You can back it up in the clockworldmod recovery in the ''backup & restore'' option.
actually depends of the version i think... because the newer versions are rootable only via downgrade. so to be able to install custom recovery aka clockworkmod/4ext, you need to downgrade first. in which case, you cant.
it may be possible to downgrade, root, flash cwm/4ext, flash newer stock, all without wipe, and then backup, but this is just a guess, i havent tied it, since 1st thing i have done when i got my phone i rooted it
edit: this was a guess since i understood you want to keep data
if you dont care about data, of course it is possible. but unrooting is something a bit different, still very doable
yes, with clockworldmod and ext4 and remember after you backed up your rom copy the clockworldmod/ext4 folder to your pc
