I have indian stock rom latest. Because no more updates I want to flash something stable and safe rom. Could anyone tell me where I can find instructions of custom rom install? Thanks.

If you want to go with an AOSP ROM, just flash it (per the instructions, of course).
For a stock based (Touchwiz), you should be able to just flash it, then flash a custom kernel (exact instructions should be in the OP).
If you have to, you can upgrade your bootloader, but I wouldn't worry about that til you have to...
I know the AOSP rom instructions.
For touchwiz i reinstall stock rom ma4 but i try the OTA and say no updates for me

What FW to flash by ROM commits?

Can anyone guide me on how to look through commits to determine what firmware to flash when installing a ROM?
ROMs usually include the correct firmware. If in doubt, if the rom has been recently updated, use the latest stable firmware.

Can someone share with me the latest stock ROM for XT1675 single sim please. It will be much appreciated

That firmware hasn't been leaked but firmware for other variants work
Technically there's no such thing as a flashable stock rom - it would just be a custom rom with no modifications
You can just flash the stock firmware and then pull the system or you can extract the system folder from the firmware - there's guides which tell you how
You can then create your own flashable zip If you want to

after hearing about anti rollback i have a doubt regarding flashing roms.
1. could i flash any rom on miui 10 after boot loader unlock?
or
2. i have to flash only miui based rom or oreo based rom?
or
3.i could flash any oreo or above version i.e. pie based rom?
You can flash any custom ROM but don't flash any firmware (don't flash firmware)

All ROM required you to flash firmware, since you are already using latest MIUI ROM you don't have to flash any firmware
Flashing older firmware file will brick your device so it's better to avoid flashing any firmware file

Downgrade to nougat custom roms

Hello all. So, I'm now on a pie custom rom with fw 9.0.3, and currently wanting to try out some older nougat aosp roms.
Do I have to flash older fw first? Or is there some other more steps I should do first? Or can I just wipe and flash roms like usual on my current fw?

You should ask that question in the thread of the rom you try to flash, in some ROM threads it say what version of the FW you need.
Nobody can say yes or no to your question because it depends on the rom you want to flash, good luck.
