yes you can.
No Problem if your bootloader is unlocked. And ONLY flash the latest Chinese version, otherwise you will brick your phone (ARB).

You should ask your vendor. Global rom is usually bloated with google apps, while chinese rom is...well as the name implies, full of chinese apps like Taobao, baidu, etc...

I have Chinese Redmi note 9 pro 5g, with Chinese stock rom.
I flashed all custom roms but I needed stock camera, because I use a lot of picturing.

That's weird I have a note 8 pro 8gb ram one only available in China came with the EU ROM but I updated to global never had any problems with the Wi-Fi
in China this phone is Redmi note 9 pro, but in EU is MI 10 lite and probably is that problem... I cant change Cn rom
