[Q] Record sound from external mic?

I have an external mic (called an iRig Mic) that connects to a phone with a headset-jack.
On an iPhone it can be used to record audio when shooting videos, but when i connect it to my Nexus S running android, the sound from the mic is not recorded. Instead the audio from the internal mic i used.
Is there any way to change the audio source when recording videos? This would be a great feature for journalists using their phone as a camcorder for interviews.

You have to buy adapter which will split the signal for microphone in and audio out (you probably know 3.5 jack in your phone is 2 directional as it supports headset with mic)
You can try to look for it on Amazon (headset buddy)
or solder into headset in the pins which are responsible for mic signal.
Then,
I know only 1 app for android which supports recording from external microphone:
Arabela Audio Recorder - choose DEFAULT audio source and it should catch the signal from external mic connected through adapter via 3.5 jack.
I THINK it can catch the audio while recording video because it works in background ... so later you will be able to remove the audio from video recording and join it with the one you recorded using Arabela with some kind of video editor

[Q] MHL cable + HDMI mini displayport cable?

Will a combination of an MHL cable, and a mini displayport/HDMI adaptor enable me to use the note with an iMac at work, with audio supported as well?
I've got a pc at home which is fine, but would like to connect up the Note at work.
This mini displayport/HDMI adaptor is said to work with audio, but I'm not sure if phone audio will be supported:

Phone audio output is not routed to the MHL port. The "Keystrokes" as you dial the number are but not the audio of the call.
When the MHL cable is attached, the internal cameras are also disabled so you cannot use a the HDMI output to display the image seen by either camera and also prevents the use of a large screen for video calls/conferencing.
I daresay this is more a limitation of Gingerbread than the phone itself. It will be interesting to see if there is more flexibility in ICS.
Nope. I've had it working with CyanogenMod 7 on my LG. It's possible in Gingerbread, perhaps it's Samsung's software that's at fault. As for sound, I have no comment, as I haven't tested it.

[q] How to disable HDMI audio?

I'm using the livedock and connecting the device to the screen with the HDMI cable.
But I got a problem, if the HDMI cable is connected to the phone the audio is connected to the screen also.
So I can't hear anything from the 3.5mm input. Can I somehow disable the HDMI sound and hear from the 3.5mm?

yea this used to be my issue as well. maybe a future firmware will enable the sound be selected to out to the 3.5mm jack instead of going with HDMI.

You need audio player support it (I use Poweramp) and enable HD audio
